White Chocolate Cranberry Oatmeal Cookies

White Chocolate Cranberry Oatmeal Cookies

2/3 cup butter, softened
2/3 cup brown sugar, packed
2 large eggs
1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/4 cups dried cranberries
2/3 cup white chocolate bits

Directions:
Preheat oven to 375F
Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs, one at a time. Combine oats, flour, baking soda, salt, and cinnamon; stir into butter mixture one cup at a time, mixing well after each addition. Stir in dried cranberries and white chocolate.
Drop a spoonful of dough 2″ apart onto ungreased cookie sheets.
Bake in the preheated oven until edges are golden, about 10 to 12 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.
