The first three weeks were basically a test drive to see what the crews would accept, some of the initial recipes were changed just a smidge, some of them were scrapped all together!

Chori Pollo
16 Servings
12 Large Boneless Chicken Breasts
20oz Chorizo
8oz Cream Cheese
1C Sour Cream
20oz Tomatoes with Green Chilis, drained
1/2C Cotija Cheese
2 med Onion, diced
4 cloves Garlic, minced
2 Bay Leaves
1T Smoked Paprika
80ml Maderia Wine or Cooking Sherry
Set Oven 350°F
Prepare 12×18 pan with cooking spray.
Slice chicken breasts so they will fit nicely in a tortilla, place into prepped pan.
In a large skillet, add a small amount of fat and brown the chorizo and onions.
Add drained tomatoes, cream cheese, sour cream, stir until well combined, finish by adding garlic, bay leaves, paprika and wine.
Spread chorizo mixture or chicken.
Sprinkle Cotija cheese over top.
Bake, uncovered 45 minutes.
Frijoles Charro

4oz Bacon
1/2C Onion, chopped
2 Jalapenos, seeded and chopped
3 cloves Garlic, minced
5C Chicken Broth
32oz Stewed Tomatoes
1T Cumin
Salt and pepper to taste
1pound Dry Pinto Beans
1bunch Cilantro, chopped
Render bacon and add onion, sauté 5 minutes, add garlic, chicken stock, stewed tomatoes, cumin, salt, pepper, dry pintos and cilantro.
Bring to a boil, lower heat and cook covered 3-4 hours.
Sopapilla Cheesecake

2cans Pillsbury Crescent rolls
16oz Cream cheese, softened
1 1/2C Sugar, divided
1t Vanilla Extract
2t Cinnamon
1/4C Butter melted
Preheat oven to 350°F.
Spray 13×9 pan with cooking spray.
unroll one can of crescent dough and press into bottom of pan sealing perforations.
In a medium bowl blend cream cheese, 1C sugar and vanilla.
Spread evenly over crescent dough.
Unroll second crescent dough onto a piece of parchment so that you can seal the perforations, place dough on top of cream cheese mixture.
Pour the melted butter over the dough.
In a small bowl combine 1/2C sugar and the cinnamon, sprinkle over melted butter.
Bake 25-30 minutes until bubbly and bottom crust is slightly browned.
